ShabbosHalachos of Ibud
One may not salt hides on Shabbos, as this is part of the process of making hides (called ibud) [1]רמב"ם (שבת יא, ה) . Even though mid’oraysa this prohibition does not apply to food, Chazal prohibited one to pickle foods because it is similar to salting hides, and according to some, because it is similar to cooking [2]דעת רש"י והטור משום דדמי לעיבוד, וכ"כ שו"ע שכא,ב, וע' סע"ג כ' שנראה ככובש כבשים אסור מפני שהוא כמבשל. [ומה שהיא אסורה ביו"ט (כמ"ש רמ"א לקמן, וכן משמע ט"ז שכא,ד, וכ"כ חיי אדם הל' יו"ט?) לכאו' מפני דלדעת רמ"א האיסור משום דדמי לעיבוד, שאם היה אסור מפני בישול היתה מותרת ביו"ט] .
One may not salt multiple vegetables on a plate because it resembles pickling. One should not even salt a vegetable when it is on a plate containing other vegetables, as some salt may fall on them [3] .
Salting food is permitted under the following conditions:
1. Permitted even for later use. If the food has a small amount of oil in it, one is permitted to salt it, even with intention to eat later that day. This is because the oil negates the effect of the salt. One also may salt it if the oil is added immediately afterwards [4]מ"ב שכא,יד . If one adds mayonnaise or salad dressing which contains oil, one is also permitted to salt it.
2. Permitted, but preferably only right before the meal when one intends to eat it. If the food is a type which is never pickled, such as if it was cooked or roasted, one is permitted to salt it [5]שו"ע (שכא, ג) כ' כן לענין ביצים ובשר, ומשמע במ"ב דהוא הדין כל דבר שהוא כאלו. וע' מג"א (סק"ה) ופמ"ג (שם), ונ"ל דר"ל שאין לאסור מטעם רש"י כיון שאין המלח מועיל להם, ולדעת רמב"ם גם מותר כיון שאין כובשים דברים כאלו. וע' שש"כ (פרק יא, הערה ו) כ' בשם הגרש"ז אויערבך דמותר למלוח חתיכות של עגבניות כיון שאין מולחים אותם אלא שלימות, אבל אני מצאתי שבאמעריקא יש מולחים עגבניות חתוכות, וגם מלפפונים חתוכות, וצ"ע. . This is because nowadays, cooked foods are not subsequently pickled, and salt does not have a visible positive effect on cooked foods. Cooked food may not be salted if one intends to eat it after Shabbos, and preferably should be salted right before the meal when one intends to eat it [6]מ"ב (שכא, כא), דלדעת מג"א וט"ז אסור למלוח לצורך סעודה אחרת, ולדעת א"ר מותר לסעודה אחרת ואסור אם רוצה לאוכלו אחר שבת, וכ' כשיש צורך יש להקל לצורך סעודה אחרת. וע' ט"ז דכיון שאין המלח משנה טבעו של הביצה, לדעת הרמב"ם והשו"ע צריך להיות מותר, ומסק שהאיסור משום טירחא, וכל זמן שיש איזה צורך למולחו מקודם, כגון שיקליט הטעם בטוב, מותר . One also may salt avocados [7]{חוט שני} or other vegetables which are never pickled or made with vinegar.
3. How to Salt Other Items. To salt cucumbers or radishes, one may dip individual pieces in salt [8]מ"ב שכא,יד בשם מג"א וב"ח (וגם הט"ז) שכן המנהג . One is also permitted to salt an individual piece very shortly [9]מ"ב (שכא, יז), שאין צריך לאוכלו תיכף ממש, אלא שעה מועטת שלא יזיע הרבה. before eating it when it not near other vegetables, such as in his hand or on a plate by itself [10]כן ראיתי ב{}, דבכה"ג אין לחוש שיפול מלח על שאר ירקות ויהא דומה לכובש כבשים. .
Chazal prohibited making saltwater on Shabbos because one may come to pickle vegetables. Therefore, one may not make saltwater [11]ויש להקל אם נתן שמן לתוך המים קודם המלח on Shabbos unless one is making a small amount which is only enough for one or two meals [12]בשביל סעודה זו או סעודה אחרת (מ"ב שכא,יא) דלא כמג"א דדוקא לאותו סעודה and it is not very strong (i.e., less than a 2:1 ratio of salt to water) [13]שכא,ב .
One may salt cooked chicken or liver, because people do not pickle these items after cooking. One is permitted to salt eggs or egg salad if there is some oil with it, such as oil in mayonnaise or fried onions. However, if there is no oil with it, it should only be salted shortly before eating it.
One may add salt to a salad after he adds dressing, even if he intends to eat it much later.
One who wants to eat tomato slices with salt should salt them one at a time, when it is by itself on a plate, and then eat it almost immediately.
